Chef's choice vegetable may be frozen or fresh and will depend on the current season.

About the Winery: Alain Normand hails from the Loire Valley, but his ancestral home is Normandy, hence his name. That makes him a Norseman—a Viking—and true to form he is a tall red-headed man. He met Sylvaine, a Burgundian, in the wine school in Beaune. They began their careers by taking over an abandoned vineyard in La Roche-Vineuse with a métayage contract, a common agricultural practice in France whereby the landlord is paid in wine. Today, Alain works the vineyards, makes the wine, and sells off the landlord’s portion to négociants. He keeps the finest for himself. Sylvaine handles the office work when she’s not handling the two children. Theirs is a typical family domaine operation.

Alain farms according to the pragmatic principles of lutte raisonnée, or reasoned fight. He plows his vineyards rather than using herbicides, and he doesn’t use pesticides or chemical fertilizers. His methods both in the field and in the cellar are the antithesis of the cooperatives whose wines dominate the Mâcon trade.

Tasting Notes: This is a rich, dense, Macon with fine length and a satisfying finish.  From 30 year-old vines and made entirely in stainless steel, it shows rich pear and apple scents that get richer and broader with air.  Clean, fresh, flavors of pear, apple, and lemon curd flow easily into the bright, pure, finish.  A very fine white Burgundy value.

About: This Côtes du Rhône is produced mainly from the Grenache (a grape variety that proprietor Hervé Dupond is especially fond of), which imparts finesse and roundness. Syrah provides color, structure and notes of pepper while a small percentage of Mourvèdre and Cinsault add complexity. The trellised vines average 40 years of age and are set in soils of sand, clay and limestone with round pebbles called “gallets.” Gallet stones act as a natural temperature regulator, absorbing the heat during the day so that the vines do not get too hot and then releasing it at night when it gets colder. A sustainable approach (inclusive of scratching the soil) is taken in the vineyard to ensure that grapes are ripe, pure and reflective of the terroir.

Tasting Notes: Elegant and structured, this Côtes du Rhône seduces the senses with red fruit aromas that intertwine with hints of pepper and spice. A fresh, lively acidity and well balanced tannins consume the palate with layers of fruit that linger on the finish.
